Baked Delights: 5 Roast Potato Recipes

1. Potatoes with peas and cheddar cheese

Ingredients

  • Potatoes (200 g)
  • 1/2 can of peas (63 g)
  • 2 glasses of cheddar cheese (300 g)
  • Vegetable oil (preferably olive)
  • Seasonings: salt and parsley
  • Optional: 1 small onion (30 g)

Preparation

  1. We peel and wash the potatoes. Next, we cut them into sticks.
  2. We bake the potato sticks at 180 ºC  for about 25 or 30 minutes, approximately.
  3. We put a pan to heat over medium heat, just greased with a little olive oil.
  4. Separately, we cut the onion into small pieces. Once ready, we put it in a pan for a few minutes, until it is golden. We should constantly turn so that it does not burn. When it’s ready, turn off the heat and set aside.
  5. We open the can of peas and take out only half of them. We strain the liquid and set aside in a container.
  6. We cut the cheddar cheese into small pieces and put them in the microwave (on low intensity) for 15 seconds. We can also grate the cheese, depending on how comfortable it is. If 15 seconds are not enough, leave the cheese in the microwave for another 10 seconds (try not to exceed it over time, to avoid the cheese from becoming dry).
  7. We remove the potatoes from the oven and pour them over the  cheddar cheese , peas and onion pieces.  Then, we sprinkle a pinch of parsley on top and… ready!

2. Roast potatoes with rosemary and orange

Ingredients

  • Potatoes (200 g)
  • 1 sprig of rosemary
  • Olive oil (to taste)
  • 1 small glass of white wine (40 ml)
  • ½ glass of natural orange juice (100 ml)
  • Seasonings: salt and black pepper
  • Optional: 1 pinch of garlic powder

Preparation

  1. We preheat the oven to 180 ºC.
  2. We wash and peel the potatoes. Next, we cut them into the shape we like best. Then we pour a little olive oil over it.
  3. We squeeze the orange juice (without straining the pulp) and mix it with the rosemary and white wine.
  4. We put the potatoes in the oven at a temperature of 200 ºC for 20 or 30 minutes. Once the first ten minutes have elapsed, we open the oven and, without removing the potatoes completely from the oven, we pour over the mixture of orange, wine and rosemary. We put the tray back in the oven and let it finish cooking.
  5. If we decide to add a touch of garlic powder, we will do it at the end  of the preparation, just before serving.

3. Roast potatoes with tomatoes and mushrooms

Ingredients

  • Potatoes (200 g)
  • Olive oil
  • 2 cloves of garlic
  • 10 cherry tomatoes (60 g)
  • 1/2 tray of mushrooms (50 g)
  • Seasonings: coarse salt and black pepper

Preparation

  1. We preheat the oven to 200 ºC.
  2. We wash the cherry tomatoes. Let’s put aside.
  3. We wash and cut the potatoes in half (without peeling them).
  4. Aside, we do the same with the mushrooms. Make sure you clean them thoroughly.
  5. We pour two tablespoons of olive oil in a tray and also the garlic cloves (previously crushed).  We place the potatoes on top (with the part covered by the skin facing upwards)  and season with salt and pepper. Once ready, we put them in the oven.
  6. As soon as the first 15 minutes of cooking the potatoes have elapsed, add the mushrooms.
  7. Let everything cook for a while longer and, in the last 5 minutes, add the tomatoes.

4. Roast potatoes with cream and bacon

Ingredients

  • Potatoes (200 g)
  • 1 carton of cream (150 g)
  • Extra virgin olive oil
  • ½ glass of grated cheese (50 g)
  • ¼ tray of smoked bacon (125 g)
  • Seasonings: salt and black pepper

Preparation

  1. We preheat the oven to 180 ºC.
  2. We wash, peel and cut the potatoes into slices of medium thickness.
  3. Separately, we cut the bacon into small pieces.
  4. We grease a tray with a little olive oil and put the potatoes on it. To follow, we season with salt and pepper.
  5. Pour the cream, grated cheese and bacon over the potatoes evenly. We make sure that the bacon is well distributed
  6. We cover the tray with a piece of aluminum and put it in the oven for 30 or 35 minutes.
  7. Once this time has elapsed, we pierce the potatoes with a toothpick to check if they are well cooked or if they need to cook a little longer.
  8. Once the last 5 minutes of cooking have been reached, remove the aluminum  and let the potatoes finish cooking au gratin.
  9. Before serving, we must let the tray rest at room temperature for a couple of minutes.

5. Roast potatoes with vegetables

Ingredients

  • Olive oil
  • Potatoes (200 g)
  • 1 whole garlic
  • 1 medium onion
  • 3 medium carrots
  • 1 red pepper
  • 1 medium courgette
  • Seasonings: coarse salt, oregano, thyme and black pepper

Preparation

  1. We wash, peel and cut the courgette into slices (approximately 1 centimeter). We do the same thing with potatoes and carrots.
  2. Separately, cut the onion into small pieces and the julienne pepper.
  3. We peel the garlic and pound it well.
  4. We preheat the oven to 200ºC.
  5. We grease a tray with olive oil and place the potatoes and vegetables on it. Season with salt and pepper and put in the oven for about  35 or 40 minutes.

Note: If you wish, you can replace the oil with butter.

As you may have noticed,  all of these recipes have a cooking time of less than an hour, which is why they are an excellent option when we don’t have much time to prepare meals. Moreover, they do not neglect the flavor, nor the originality.
