  • 4 yams (450 g)
  • 1 cup of cooked peas (200 g)

  • First you need to bake the potatoes in the oven. You can choose whether to leave or remove the peel. In any case, wash them well.
  • Cut the sweet potatoes in half, lengthwise.

  • If they are very large you can also cut them into slices; in this way they will cook faster.
  • During cooking, sweet potatoes may release sugars that caramelize with heat. For this reason, we recommend covering the pan with baking paper or using a silicone pan.
  • Bake at a temperature of 200 degrees and cook for at least 45 minutes. The cooking time, however, depends on the thickness of the potato, so it will be good to check after half an hour. Prick the pulp with a fork to check if it is already tender.

Preparation of the filling

  • In the meantime, you can prepare the filling. First, cut the avocado in half and remove the stone with a spoon.
  • Cut it into pieces, add it to the peas in a bowl and mash everything with a fork. If you don’t like lumps, you can use the blender.
  • Season the cream obtained with oil, salt and spices to taste.
  • As soon as the potatoes are ready, lightly salt them and spread the filling on top.
