1. Zucchini au gratin with tomato sauce
Ingredients
- 2 courgettes
- 1 can of chopped tomatoes (250 g)
- 1 large onion
- 3/4 cup of grated cheese (150 g)
- 3 tablespoons of butter (60 g)
- 4 tablespoons of olive oil (60 g)
- A pinch of salt
Preparation
- Carefully wash the courgettes, remove the ends and cut them into long strips of about half a centimeter in thickness.
- Immerse the courgette strips in a pot with boiling water and a pinch of salt, and let it boil for 7 minutes. At the end of cooking, remove from the heat and drain.
- In a pan, peel and cut the onion and fry it over low heat with oil and salt.
- Pour the tomatoes into the pan and simmer for 8 minutes, stirring frequently.
- Grease the base of an oven dish with butter and arrange a layer of grated cheese, a layer of zucchini and finally another layer of grated cheese.
- Cover with the tomato sauce and sprinkle with plenty of grated cheese.
- Finally, arrange the pieces of butter on the surface.
- When the oven has reached the temperature of 200 ºC, insert the pan and let it cook for about 25 minutes, until a golden surface is obtained.
Gratin of tomatoes and courgettes
Ingredients
- 1 medium courgette
- 2 tomatoes
- Grated cheese
- Bread crumbs
- Oregano to taste
- Olive oil
- A pinch of salt

Preparation
- Carefully wash the courgettes and tomatoes and cut them into rings.
- Grease a baking dish and arrange the vegetables in alternate layers.
- Sprinkle the surface with breadcrumbs, oregano, a drizzle of olive oil and pepper

- 1 courgette

- 1 clove of garlic
- 3 tablespoons of Parmesan (60 g)

Preparation
- Wash the courgette and cut it into slices
- Immerse the pieces of courgette in a pot with boiling water and a pinch of salt and let it boil for 5 minutes.
- Drain the zucchini well and use them to cover the bottom of an ovenproof dish.
- Add salt, pepper and half a finely chopped clove of garlic.
- At this point, cut the tomato into slices and place them on the courgette layer. Salt, pepper and add the other half of the minced garlic.
- Arrange another layer of courgettes and season with oil, salt and pepper as before.
- Finish with a generous layer of grated cheese which must cover the entire surface.
- Bake in the oven at 200 ºC for 15 minutes.
Zucchini with gratinated tomatoes
Ingredients
- 2 medium-sized zucchini (200 g)
- A clove of garlic
- 1/2 cup of tomato sauce (125 ml)
- 3 tablespoons of grated cheese (60 g)
- Oil and salt
Preparation
- Wash and cut the courgettes into thin slices.
- Heat the oil in a saucepan and fry the courgette slices. Cover the pot and let it simmer to soften them well.
- Drain the zucchini and use them to cover the bottom of the pan that you have previously greased.
- Pour in the tomato sauce. We advise you to adjust the sauce with a little sugar to eliminate the acidity of the tomato.
- Season to your taste.
- At this point, cover with a layer of grated cheese.
