Tricolor vegetable flan

Ingredients for 4 people

  • 4 eggs
  • 3 cups of boiled potatoes (360 g)
  • 3 cups of boiled carrots (360 g)
  • 2 3/4 cups boiled spinach (500 g)
  • 1/2 stick of butter (100 g)
  • 2 tablespoons of minced garlic (20 g)
  • Salt and Pepper To Taste)
  • 1 pinch of nutmeg (2 g)
  • Olive oil

Preparation

  1. In a pan with olive oil, sauté the garlic and spinach. Add salt and pepper to taste.
  2. Remove the pan from the heat, add two eggs, mix everything and set aside.
  3. Meanwhile, prepare a puree with carrots and season with salt and pepper. Add an egg, then mix everything until smooth and set aside.
  4. Prepare a mashed potatoes. Open an egg, add half the butter listed and the nutmeg. Season with salt and pepper and set aside.
  5. Preheat the oven to a moderate temperature.
  6. Grease an oven mold (of the shape you prefer) with what remains of the butter.
  7. Pour the mashed potatoes into the mold as the first layer and smooth the surface. Then, put the spinach, without forgetting to flatten – again – the surface to make it uniform.
  8. Finally, add a layer of mashed potatoes and, with the help of a spoon, press the surface to make it uniform.
  9. If you want, you can repeat the procedure for one of the layers you prefer.
  10. Cover the mold with aluminum foil and place in the oven for 20 minutes.
  11. Remove from the oven and let it cool before taking the flan out of the mold.
Broccoli flan

Quick to prepare vegetable flan

Ingredients for 4 people

  • 1/2 red pepper
  • 1 carrot
  • 1/2 cauliflower
  • 1 purple onion
  • 1 leek
  • 3 asparagus
  • 2 cups of fresh spinach (100 g)
  • Salt, pepper and nutmeg
  • Olive oil
  • 1/2 glass of skimmed milk (100 ml)
  • 2 slices of bread
  • 2 eggs

Preparation

  1. Heat a pan with a drop of oil . Cut the onion into cubes and fry it.
  2. Cut the tomato and asparagus in the same way and add the onion. Season with salt, peppers and nutmeg.
  3. Add the carrots, also cut into small pieces, and the leek into strips. Cook for a few minutes or better, until the vegetables are tender.
  4. Cook the cauliflower in boiling water for 10 minutes; then put it in the pan. Spinach should be added raw and whole.
  5. Let it cook for a moment, until the water in the spinach is absorbed.
  6. Meanwhile, soak the bread in milk. As soon as the bread begins to “crumble” add it to the sautéed vegetables. Mix well and turn off the heat. So, set aside.
  7. Preheat the oven to a moderate temperature while covering an ovenproof dish with parchment paper.
  8. Meanwhile, beat the eggs and season with salt and pepper.
  9. Pour the sautéed vegetables into the mold and then add the beaten eggs. Tap the mold to make sure that the preparation becomes homogeneous.
  10. Remove from the oven, and leave in a bain-marie for about 20 minutes. The flan will be ready if by inserting a toothpick in the center of it, it will remain dry.
  11. At this point, remove it from the oven, from the mold and let it cool before serving.

Ingredients

  • 2 cups of milk (500 ml)
  • 2 and a half tablespoons of butter, margarine or vegetable oil (50 g)
  • 4 tablespoons of flour (50 g)
  • A pinch of salt, pepper and nutmeg

Preparation

  1. Put the milk in a saucepan to bring it to a boil.
  2. In a deep saucepan, melt the butter, margarine or heat the oil. You can also mix these three ingredients together.
  3. Add the flour and mix until golden brown desired.
  4. Remove from the heat and add the boiled milk; stir to obtain a homogeneous mixture and put everything back on the heat over low heat. With the help of a wooden spoon or a mixer, continue to mix until you have obtained a homogeneous and lump-free consistency.
  5. Remove from the heat and season to taste. Then, pour the béchamel over the flan.
