The garlic soup is a classic in the kitchen. If you’ve never tried it, now is the time. We offer you three simple versions to give you the opportunity to choose the one that best suits your tastes.

Garlic is an ingredient native to Central Asia, from which it has spread around the world. It is rich in mineral salts such as phosphorus, potassium, iodine, and vitamin B6 : a food, therefore, highly recommended.

Simple garlic soup recipes

We have selected for you three quick ways to prepare garlic soup, also called Castilian soup. Like all soups, it lends itself to a number of variations, including a different proportion of ingredients, according to tastes and occasions.

1. Vegan soup

The garlic soup or Castilian soup lends itself to several variations.

This recipe requires few ingredients and is especially designed for vegetarians and vegans. For your guests who do not eat foods of animal origin, it can be the ideal dish. It is easy to prepare and very tasty.

Ingredients (per person)

  • 2 cloves of garlic
  • 30 grams of bread from the day before
  • 150 ml of vegetable broth
  • A hint of sweet chili
  • A few tablespoons of extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Cut the bread into small cubes or thin slices and set aside.
  2. Heat the olive oil in a saucepan.
  3. Peel the garlic and then cut it into strips, then sauté it in olive oil until golden brown.
  4. Then add the bread, without stopping stirring to prevent it from burning.
  5. Season with the chilli and mix.
  6. Pour in the broth and cook over high heat until the soup reaches a boil.
  7. Lower the heat and cook for another 10 minutes until the bread is undone.

2. Garlic soup with spicy salami

This spicy salami recipe is one of the most traditional, but it is also more fatty and caloric.

This is an easy, yet extremely flavorful version of garlic soup. Since it includes the addition of salami, it is also more caloric and less healthy (due to the cholesterol content). If eaten occasionally, however, it is not a health problem.

Ingredients

  • 4 cloves of garlic
  • 120 g of salami
  • 1 loaf of hard bread
  • 130 ml of milk
  • 2 eggs
  • Salt and sweet pepper to taste
  • 1 liter of meat broth
  • Extra virgin olive oil (q, b.)

Preparation

  1. Heat the olive oil in a saucepan. Brown the garlic cloves after removing the peel and mincing them.
  2. Chop the salami and bread, then add them to the saucepan. Mix well.
  3. Add the meat broth and bring to a boil. Lower the heat and continue to cook for about ten minutes or until the bread has come apart.
  4. Add the two eggs and continue to mix vigorously for 5 minutes, until creamy. Serve hot.

3. Garlic soup with poached egg

Egg is a source of noble proteins and energy. Its amino acid composition is balanced and this is why it is recommended to eat it several times a week. One study even states that the consumption of one egg per day is not associated with any increase in cardiovascular risk.

Ingredients

  • 2 cloves of garlic
  • 3 eggs
  • 150 g of bread
  • 1 liter of vegetable broth
  • 1 teaspoon of sweet chili
  • Extra virgin olive oil (q, b.)
  • Salt (to taste)
  • Parsley (to taste)

Preparation

  1. First, peel and chop the garlic.
  2. Heat the oil in a saucepan and fry the garlic.
  3. Cut the bread into slices and add it to the sauté when it is golden.
  4. Add the chilli and mix.
  5. Now pour in the vegetable broth, add salt and let it boil for a couple of minutes.
  6. Remove the soup from the heat and fill yourself with bowls suitable for the oven. Break an egg on each of them and place in the oven at 180 degrees until the egg has congealed. Finally, decorate with a little parsley.

Variations of the soup

As we always say, the only limits in the kitchen are imposed by the imagination! Here are some more ideas for making a tasty garlic soup, but with other ingredients:

  • Add the potatoes. In this way it increases the nutritional value and the satiating power: it can thus become a main dish.
  • How about adding diced raw ham or speck ? But beware of salt. First add the ham, then season with salt.
  • Use hot pepper instead of sweet  to get a more interesting flavor.
  • You can also add vegetables such as leeks, courgettes, carrots, mushrooms.
