- To start, prepare the chickpeas or drain them if you use canned ones; mash them with a fork together with a glass of water and a drizzle of oil.
- Then season with salt, pepper and a little vinegar. Then keep in the refrigerator.
- Meanwhile, boil the green beans and cut them into small pieces.

Preparation
- First, soak the stale bread in cold water for about 10 minutes. When finished, remove the excess water and set aside.
- Toast the almonds in a pan for a few minutes, until they are lightly browned. Keep a few aside for the final garnish.
- Put the soaked bread and toasted almonds in the blender.
- Add a few tablespoons of water and blend.
- Continue to blend slowly pouring in the rest of the water, then the garlic, oil and vinegar, until you get the desired consistency.
- Let the ajoblanco cool for a couple of hours in the refrigerator before serving in a deep plate decorated with a few whole almonds.
